I first looked for recipes for gingerbread, when some clients requested cookies for a wedding. Some recipes used margarine, but I wanted to give my Bride and Groom something a little more decadent, so my version uses butter.
When I wanted to make Christmas Cookies, I decided to add an Orange Drizzle Icing that complimented the gingerbread flavours, and gives it a nice Christmassy feel.
These Christmas Gingerbread Cookies with Orange Drizzle Icing are great for cutters, as they hold their shape during baking. I made Christmas Trees, Stars and Shoes, as putting out shoes on the Eve of The day of the Kings is a tradition here. Children leave out their shoes and then find presents in them in the morning. The number of cookies this makes is approximate, as it depends on the size and shape of your cookie cutters.
I use these as Christmas decorations, by placing them in little cellophane bags and trying with ribbon to hang from the tree. If you try these and like them, then please rate my recipe and make a comment.
