I originally found a recipe for Salmon and Scallop Skewers with Romesco Sauce on Health.com and a Romesco Sauce was part of that recipe. As usual I changed a couple of things, I use plum tomatoes, but this works well with whatever tomatoes you may have in.
This Romesco Sauce is a nice heart healthy option which is served cold on the side and a change from the usual creamy sauces. Its tasty, and very quick and easy to make.
I like to serve this with fish or chicken, but it would go down equally well with barbequed meats.
I use the ready roasted piquillo peppers, and use the olive oil from the jar, but you could roast your own peppers if you wanted to instead, or if the jars are not available where you live.
