I was using Paul Hollywood´s basic white bread recipe, from his book,How to Bake, but that contains butter and I decided I would like to make it a bit more healthy by using olive oil instead.
Also fresh yeast is much cheaper here in Mallorca than buying the dried stuff. So this is the recipe that I adapted.
I love the Bacheldre Watermill Organic Stoneground Strong Unbleached White Flour for this recipe, but you can use whichever type you prefer or that is easily available. You will need a 2lb loaf tin for this recipe. If you don´t have a tin, you can just roll it into a round and bake it on a greased baking sheet, or divide it into 6 small rolls.
